two possibilities:
1. either the orbit of that image is pretty bad (and what you see there are fringes due to the wrong geometry)
2. or that image is very noisy (maybe because of a storm) and what you see there is the result of noise fitting -

if you process your data with the STAR graph,
you look for good and stable targets in time, which usually are also little affected by geometric decorrelation.
You could be in an area with average little spatial coherence but with a few sparse stable targets (like sparse isolated houses in the countryside) and everything would work.

your APS processing looks good. After that, you have to process more points to get denser results. You can do it either in the MISP or in the GAR (Graph Analysis and Refinement) modules.

overfit is caused by trying to fit too many parameters in few data. the range of v and h does not cause overfit. range of v and h should be chosen depending on the analyzed area

if you encounter errors u MUST include lasterror and log files to get answers2. ur data is sparse. exporting a raster of sparse data is not a good idea. use the filter/matrix visualization in scatter plots and export it from there

The log says that file M:ICELANDRESULTSMATLABInSarParam.mat is corrupted.
Unless this is a system/matlab problem (in which case the solution is surely more complex), simply delete the file and try again.

colors are the same, but you cannot compare a continuous image with black-circled dots. The effect is obviously slightly different. Moreover, the two results are differently downsampled by googleearth. you have to look at them locally at the maximum resolution. there you will see that colors are the same

if you select all pixels in an area, all those pixels will be treated and exported.
you do not want all pixels in that area
you want all pixels with some additional thresholds, like temporal coherence higher than a value or whatever.
